Oh Pinterest…. the site of countless ideas and never ending inspiration! DIY projects, fashion ideas, and drool worthy recipes galore! This time, as my mother-in-law’s birthday approached I was again assigned the job of making dessert. Last year I made the Chocolate PB Trifles, and while I know she LOVES peanut butter and chocolate, this year I wanted to pick something different! <Enter Pinterest and Cherry Pie Bars> These seemed like a great dessert that wouldn’t take a ton of time or effort. The fruit filling is definitely a switch from the peanut butter and chocolate. So I gave it a try. The recipe suggested using two cans of cherry pie filling, if you love cherries. It also called for the use of a 15x10x1 inch pan with the substitution of a 9×13 inch pan. I definitely went with the two cans of cherries and didn’t regret it! Although I did use a 9×13 because I didn’t have the other. And that I do wish I had done differently. While the flavor was amazing, the crust on the bottom was a little too thick for my liking. Which in turn had to bake for about 15-20 minutes longer than called for. Overall, I can see myself making this again with the said adjustment. The crust was more of a cookie than a pie but had the perfect flavor to balance the cherries. And the glaze on top added the perfect amount of sweetness!
