Banana Snack Cake

Snack time and brown nearly black bananas…two things you will find at my house most days of the week.  I’m a not-quite-yellow-must-have-a-little-bit-of-green banana eater, so when they are past that, they are usually waiting around to be used up another way.

Last week I decided to combine snack time and ripe bananas and made this easy, totally snack-worthy cake, the peanut butter layer was in the original recipe…adding chopped Reese’s?  Something I decided on my own and it was the best idea ever.  My kids gobbled this up and I can see myself making this over and over again.

But I would love a few other suggestions for using up those bananas that keep staring me in the face, what’s your favorite thing to make with those ripe bananas?

Banana Snack Cake

Ingredients

  • 1 3/4 cups FLOUR
  • 1 cup SUGAR
  • 3/4 teaspoon BAKING SODA
  • 1/2 teaspoon SALT
  • 1/4 cup BUTTER, melted and cooled
  • 2 medium BANANAS, mashed
  • 2/3 cup SOUR CREAM
  • 1 teaspoon VANILLA EXTRACT
  • 3/4 cup CREAMY PEANUT BUTTER
  • 20 MINI REESE'S PEANUT BUTTER CUPS, chopped

Instructions

  1. Preheat oven to 350°. Line with foil and lightly grease a 8 or 9 inch square pan.
  2. Whisk together flour, sugar, baking soda and salt in a medium bowl.
  3. In a separate bowl, combine butter, bananas, sour cream and vanilla. Add this to dry mixture and stir until just combined.
  4. Spread into prepared pan. Bake for 30 minutes or until a toothpick tests clean.
  5. Cool for 10 minutes, spoon peanut butter onto warm cake and let set a few minutes. Spread over entire cake. When completely cool, top with chopped peanut butter cups and serve.

    yay for someone else who likes to eat their bananas with a little bit of green still on them 🙂 I am loving this fun banana cake with Reese’s on top. That is a stroke of genius there girl!!!!     I have this in the oven as we speak! A nice, easy recipe that isn’t terribly bad for you. I will say, I am omitting the PB cups because I don’t have any handy in the pantry. Thanks for the recipe!
