Mini Garlic Monkey Bread

As I promised in Monday’s post, next week we’ll have 5 different SOUP recipes to share with you.
Before we get to that, may I remind you of a few of our favorites?  Like Bacon Jalapeno Corn Chowder, Spicy Chicken Tortilla, Broccoli Cheddar Potato Soup, White Chicken Chili, Zuppa Toscana or Black Bean & Salsa Soup…it may be the perfect weekend to try out one of these!
To prelude SOUP week, I want to share one of soup’s favorite side kicks…bread.  Bread sticks or beer bread are always delicious.  There’s a new kid on the block…mini garlic monkey bread.  It is, in one word – divine!  This recipe takes ordinary biscuits and takes them to another level.  You can easily halve or double this recipe depending on the size of your crowd.

Mini Garlic Monkey Bread

Ingredients

  • 2 (7.5 oz.) cans BUTTERMILK BISCUITS
  • 6 Tablespoons BUTTER, melted
  • 4 cloves GARLIC, minced
  • 2 Tablespoons DRIED PARSLEY
  • 1/4 cup GRATED PARMESAN CHEESE, plus more for sprinkling on top

Instructions

  1. Preheat oven to 400°. Lightly grease a 12 cup muffin tin with cooking spray.
  2. Cut each biscuit into quarters and place into a bowl.
  3. Combine butter, garlic, parsley and 1/4 cup of parmesan cheese. Pour over biscuit pieces.
  4. Gently toss together and make sure everything is evenly coated with the butter mixture.
  5. Place 6-7 biscuit pieces in each muffin cup. Sprinkle with additional parmesan cheese.
  6. Bake 12-14 minutes or until golden. Serve warm.

    i’m not entirely sure what monkey bread is… i kinda thought maybe it meant “cute” bread – like when you see a puppy and you exclaim “OH you little monkey face! you’re so cute!”… but i’m starting to think the lack of confusion re “monkey” may mean it’s an actual thing…
