Pumpkin Snack Cake
 
 
Serves: 16 2 inch squares
Ingredients
  • ½ cup BUTTER, softened
  • ¾ cup SUGAR
  • 2 EGGS
  • ½ cup PUMPKIN PUREE
  • 1 teaspoon VANILLA EXTRACT
  • 1 cup FLOUR
  • 1½ teaspoons PUMPKIN PIE SPICE
  • ½ teaspoon BAKING SODA
  • ½ teaspoon BAKING POWDER
  • ¼ teaspoon SALT
Instructions
  1. Preheat oven to 350 degrees. Line an 8x8 baking pan with foil and grease.
  2. In a large bowl, beat together butter and sugar until fluffy.
  3. Add eggs, pumpkin puree and vanilla. Mix until well combined.
  4. In a separate bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder and salt.
  5. Stir dry ingredients into pumpkin mixture and spread batter into prepared pan.
  6. Bake 23-25 minutes until a toothpick inserted in the center tests clean.
