Iced Cranberry Orange Bread
 
 
Ingredients
  • 2 cups FLOUR
  • ¾ cup SUGAR
  • 1½ teaspoon BAKING POWDER
  • ¾ teaspoon SALT
  • ½ teaspoon BAKING SODA
  • ¼ cup BUTTER, room temperature
  • 1 Tablespoon ORANGE ZEST + more for garnish
  • ¾ cup ORANGE JUICE
  • 1 EGG
  • 1 cup CHOPPED CRANBERRIES
  • 1 Tablespoon ORANGE JUICE
  • 1 cup POWDERED SUGAR
Instructions
  1. Grease a loaf pan. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt and baking soda. Blend in the butter using a mixer.
  3. Add orange zest, juice and egg. Mix well. Fold in cranberries and spread batter in pan.
  4. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool completely.
  6. Stir together 1 Tablespoon orange juice and powdered sugar. (Add more juice if you want a thinner icing.) Spread on top of cooled bread, garnish with additional orange zest if desired.
