Veggie Confetti Chili
 
 
Ingredients
  • 1 Tablespoon OLIVE OIL
  • 1 cup CHOPPED ONION
  • 1 RED BELL PEPPER, cored and chopped
  • 1 teaspoon MINCED GARLIC
  • 1 (15 oz) can PINTO BEANS, drained
  • 1 (15 oz) can BLACK BEANS, drained
  • 1 (15 oz) can KIDNEY BEANS, drained
  • 2 cups FROZEN CORN
  • 1 (14.5 oz) can FIRE ROASTED DICED TOMATOES
  • 1 (15 oz) can TOMATO SAUCE
  • 1 cup SALSA VERDE
  • 2 Tablespoons CHILI POWDER
  • 2 teaspoons GROUND CUMIN
Instructions
  1. Heat oil over medium high heat. Add onion and bell pepper and cook about 4 minutes stirring occasionally. Add garlic and cook another 2 minutes.
  2. Stir in remaining ingredients and simmer for about 20 minutes.
  3. Serve with your favorite chili toppings.
