Peppermint Pattie Cookies
 
 
Minty, refreshing and super easy - Peppermint Pattie Cookies will make anyone's day!
Ingredients
  • 1 box DEVIL'S FOOD CAKE MIX
  • 1 EGG
  • ½ cup BUTTER, room temperature
  • ¼ teaspoon PURE PEPPERMINT EXTRACT
  • 1 8 oz. pkg. YORK PEPPERMINT PATTIE MINIS
Instructions
  1. Preheat oven to 350 degrees.
  2. Using a mixer, thoroughly combine cake mix, butter, egg and extract.
  3. Scoop dough into 1 Tablespoon sized balls, roll until smooth and place on baking sheet. Press down slightly with your hand.
  4. Bake for 8-9 minutes until slightly puffed and the edges start to crack.
  5. Press two peppermint pattie minis* into the middle of each cookie immediately after removing from the oven.
  6. Let cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.
Notes
There wasn't quite enough peppermint patties to do two on each cookie. So on the last few there was only one.
