Fire Roasted Tomato and Basil Pasta
Dinner is on the table in 30 minutes with this easy recipe for Fire Roasted Tomato and Basil Pasta.
Serves: 4
  • 4 oz. CREAM CHEESE
  • 1 14.5 oz. can FIRE ROASTED TOMATOES (regular or garlic), undrained
  • 1 teaspoon DRIED BASIL
  • 2-3 GARLIC CLOVES, minced or crushed
  • ¼ teaspoon SALT
  • 2 small ZUCCHINI, sliced into half moons
  • 8 oz. MUSHROOMS, quartered
  • 1 pkg. CHICKEN SAUSAGE, sliced
  1. Boil water for pasta and cook according to package directions.
  2. Preheat oven to 425 degrees. Line a baking sheet with foil. Spread veggies and chicken sausage out on pan. Drizzle veggies with a bit of olive oil. Bake for 10-12 minutes.
  3. In a small sauce pan, heat cream cheese, tomatoes, basil, garlic and salt over low heat until combined.
  4. After pasta is finished cooking, drain and return to pan. Add sausage and veggies. Pour in sauce and toss together. Serve immediately.
