Garlic & Herb Stuffed Mini Sweet Peppers | Crumbs and Chaos Stuffed Mini Sweet Peppers – an easy appetizer that is so packed with flavor you may just ignore the main dish all together!

Can I start out today’s post by saying that any party that starts with an appetizer that involves cream cheese is a party I want to be at?  One of my go-to appetizers is ridiculously easy – 1 block of cream cheese mixed with 4-5 fresh minced garlic cloves.  Served warm or room temperature spread on crackers is about the best thing ever.

Well, these stuffed peppers are an upgrade of that particular cream cheese combination.  Sweet, crunchy peppers stuffed with a robust garlic and herb cream cheese, they’ll be devoured in no time.  And they’d be so perfect for any occasion because you can make them ahead of time.  Using fresh garlic cloves gives these quite a kick, if you’d prefer a more muted version using jarred minced garlic should do the trick.

Garlic & Herb Stuffed Mini Sweet Peppers

Serve up a plate of Garlic & Herb Stuffed Mini Sweet Peppers at your next gathering and watch them disappear!

Ingredients

  • 8 oz. block CREAM CHEESE, room temperature
  • 4 GARLIC CLOVES, freshly minced or grated
  • 1/2 teaspoon DRIED PARSLEY*
  • 1/4 teaspoon DRIED DILL
  • 10-11 MINI SWEET PEPPERS, stems and seeds removed and cut in half long ways

Instructions

  1. Mix together cream cheese, garlic and herbs.
  2. Stuff each pepper half with about 1 Tablespoon of cream cheese mixture. Chill until serving.

Notes

*If you're using fresh herbs, multiply these measurements by three.

Simple Southwest Potatoes | Crumbs and Chaos #sidedish #potatoes www.crumbsandchaos.net The beauty of taking a little help from the freezer section for dinner is, that while you’re working on the main dish, your potatoes are baking away.  I chose to season mine simply and sprinkle them with a little bit of shredded cheese because potatoes and cheese just go together.  Adding fresh cilantro and finely chopped green onion brings the flavor explosion.  Don’t forget the dipping sauce – a little greek yogurt and hot sauce spices things up just a bit.  The potatoes come cut in chunks small enough to stab with a fork or big enough to be a finger food should you want to enjoy these as an appetizer for game day.

Want to make this a main dish?  Top with seasoned ground turkey or ground beef, pork carnitas or cafe rio chicken and dinner is served ;)

Simple Southwest Potatoes

This recipe for Simple Southwest Potatoes is easy to make and packed with flavor.

Ingredients

  • 1 (32 oz.) bag ALEXIA SMART CLASSICS TRI-CUT POTATOES
  • 1 Tablespoon TACO SEASONING
  • 1/2 cup PLAIN YOGURT (or sour cream)
  • 1 Tablespoon HOT SAUCE (I used Frank's Red Hot - use more if you'd like it spicier)
  • SHREDDED CHEESE (use as much as you like)
  • FRESH CILANTRO, chopped
  • GREEN ONION, finely chopped

Instructions

  1. Bake potatoes according to package directions.
  2. Make dipping sauce: mix together yogurt and hot sauce, set aside.
  3. When potatoes are done baking, sprinkle with taco seasoning and stir together to coat all of the potatoes. You can sprinkle on the cheese now and put back in the oven until the cheese is melted. Or if your serving dish is oven safe, you can put the potatoes in the serving dish and then top with cheese and put back into the oven to melt cheese.
  4. Sprinkle with cilantro and green onion. Serve immediately with dipping sauce.

Smoky Bacon Mushroom Dip

An easy recipe for Smoky Bacon Mushroom Dip comes together in minutes and is ooey, gooey delicious!

Ingredients

  • 4 oz. FRESH MUSHROOMS, finely chopped
  • 4 slices CRISP COOKED BACON, finely chopped
  • 4 oz. CREAM CHEESE, room temperature
  • 1/2 cup KRAFT MAYONNAISE
  • 1 cup KRAFT ITALIAN CHEESE BLEND (plus more for the top if desired)
  • 3 cloves FRESH GARLIC, minced (use 1 teaspoon of garlic powder if you must)
  • 1 teaspoon ITALIAN SEASONING

Instructions

  1. Saute mushrooms in a bit of butter or olive oil. While they're cooking, place remaining ingredients into a mixing bowl. Add cooked mushrooms, stir well.
  2. Put into a oven safe dish, such as a pie plate, sprinkle with extra cheese if you'd like. Bake at 350 degrees for about 15 - 20 minutes until bubbly and the cheese is golden on the edges.
  3. Serve with your favorite dippers - pretzel crisps, crackers, veggies.

This Cranberry Pecan Spread is an easy holiday appetizer and comes together in just minutes.

Ingredients

  • 4 oz. HONEY GOAT CHEESE (or plain)
  • 4 oz. CREAM CHEESE, room temperature
  • 2 Tablespoons DRIED CRANBERRIES, finely chopped
  • 2 Tablespoons DRIED CHERRIES*, finely chopped
  • 2 Tablespoons PECANS, finely chopped
  • 3 GREEN ONIONS, finely chopped

Instructions

  1. In a mixing bowl, combine goat cheese and cream cheese. Add the remaining ingredients and stir well. Serve chilled or at room temperature with crackers or pretzel crisps.

*You could use all cranberries instead of adding cherries.

BBQ Turkey Sliders Recipe -

Leftover cooked and chopped TURKEY

Your favorite BBQ Sauce

Smoked Gouda Cheese, sliced

1 package of King’s Hawaiian Dinner Rolls®, halved

1/2 cup WHOLE CRANBERRY SAUCE

2 Tablespoons PICKLED JALAPENO, finely chopped

1 Tablespoon FRESH CILANTRO, chopped (optional)

2 Tablespoons MAYO

 

Make cranberry spread by combining cranberry sauce, jalapeno, cilantro and mayo.  Mix turkey with BBQ sauce in a small bowl.

Assemble sandwiches – open rolls, layer turkey and cheese.  Spread inside of top half of roll with cranberry spread and place on top of sandwich.

Things have been a little sweet lately, so we’re going over to the savory side today with a GARLIC FETA DIP that’s super easy to make and full of flavor.

I’ve talked before about having friends over for dinner often, it’s so much easier and more relaxed with the kids to enjoy each others company at one of our houses.  But my dining room doesn’t really allow for seating for more than 6 people, which means we usually feed the kids first and then the adults sit down together after that.  It’s dinner time, the kids are munching away and my husband is standing there hungry as always.  I try to always have a appetizer on hand for times like that.  You can do so many things with a block of cream cheese!

This Garlic Feta Dip right here is our most recent favorite – and by our, I mean every person that sat around the table that evening was in love with it.  And so was a different group of people I served it to a few nights later.  It’s incredibly easy and full of intense flavor from the garlic, feta cheese and spices.  This dip whips up in no time and will be gone just a quickly!

This insanely easy dip is perfect for your next get together and is full of amazing flavor.

Ingredients

  • 8 oz. FETA CHEESE
  • 8 oz. CREAM CHEESE
  • 2/3 cup MAYO
  • 4 GARLIC CLOVES, minced (you could use less if you don't like a lot of garlic)
  • 1/2 teaspoon DRIED BASIL
  • 1/2 teaspoon DRIED OREGANO
  • 1/4 teaspoon DRIED DILL
  • 1/4 teaspoon DRIED THYME

Instructions

  1. Crumble the feta if it didn't come already crumbled. Stir together all ingredients in a mixing bowl. Put in a serving dish and chill until you are ready to serve. Enjoy with pretzel crisps, crackers or fresh veggies.

2 Tablespoons FRESH BASIL, chopped

1 cup CHERRY TOMATOES, quartered

2 oz. FRESH MOZZARELLA, diced

SALT & PEPPER

EXTRA VIRGIN OLIVE OIL

 

Stir together basil, tomatoes and mozzarella.  Season to taste with salt and pepper, drizzle with olive oil and stir again.  Serve immediately with your favorite Triscuit crackers.

Onion & Goat Cheese Dip

Ingredients

  • 1 Tablespoon OLIVE OIL
  • 1 medium YELLOW ONION, diced
  • 3 GARLIC CLOVES, minced
  • 1 cup PLAIN GREEK YOGURT (or sour cream)
  • 4 - 5 oz. GOAT CHEESE
  • 3 Tablespoons finely chopped FRESH CHIVES

Instructions

  1. Heat oil in a pan over medium-low heat. Add onion and cook until soft and golden in color (you may have to adjust the heat if it's browning too fast.) Stir occasionally, this will take about 20 minutes.
  2. Let cool for a few minutes.
  3. In a food processor, combine greek yogurt, goat cheese and chives. Add onions and pulse until combined. Season with salt and pepper.
  4. Chill about an hour before serving with a sturdy Kettle Brand chip.
