A quick and delicious appetizer or light dinner dish, Bacon Cheeseburger Flatbread is a total crowd pleaser!

You guys, we are in the middle of packing our house to move…that means I’m writing this post at my dining room table while sitting next to a juicer, other randomness that came off of the top of the fridge and 3 frothing pitchers, among other things.  I’m doing my best to focus on the prize at the end of the challenge called moving – a new home sweet home for this sweet family of mine.  We’ll get there, heck, I’m optimistic after  yesterday – we actually already cleaned the fridge out completely {that’s never happened in all of our 10 moves – #notmyfavoritetask}.

So about this Bacon Cheeseburger Flatbread…it’s the right combination of all of the good stuff – bacon, cheddar cheese and dill pickles all on a thin flatbread crust.  So many things that I love, putting them all together in small amounts on a flatbread is the way to go.  All the goodness of that huge bacon cheeseburger in a smaller dose.  Add a side salad and dinner is served ;)

Bacon Cheeseburger Flatbread
 
Serves: 4 flatbreads
Ingredients
  • 1 lb. PIZZA DOUGH
  • OLIVE OIL
  • ½ lb. GROUND BEEF
  • ½ Tablespoon KETCHUP
  • ½ Tablespoon YELLOW MUSTARD
  • ½ teaspoon SEASONED SALT
  • ¼ teaspoon PEPPER
  • ¼ teaspoon GRANULATED GARLIC (or garlic powder)
  • 4 pieces CRISP COOKED BACON, chopped
  • 4 oz. SHARP CHEDDAR CHEESE, shredded
  • DILL PICKLES, chopped
  • 2 Tablespoons MAYONNAISE
  • 2 Tablespoons SOUR CREAM
  • 2 teaspoons HOT SAUCE (I used Frank's Red Hot)
Instructions
  1. Preheat oven to 425 degrees.
  2. Brown ground beef and drain any grease.
  3. Add ketchup, mustard, seasoned salt, pepper and garlic. Stir to combine and set aside.
  4. Divide pizza dough into 4 pieces. Roll out one piece into a oval/rectangle. Place on baking sheet. Repeat with remaining dough. Drizzle dough with about a teaspoon of olive oil and brush to the edges. Bake for 5-7 minutes. Remove from oven.
  5. Divide meat mixture and distribute evenly over each flatbread. Top with chopped bacon and cheddar cheese. Return to the oven for 4-5 minutes until cheese is melted.
  6. Cut into pieces. Top with chopped pickles and drizzle with sauce.
To make sauce:
  1. Combine mayo, sour cream and hot sauce.

You guys…who loves a good chips and dip appetizer?  I am frantically raising my hand.  I do in so many ways.  And this tray of appetizer goodness is just right for so many occasions…parties, game day, girl’s night in, the list could go on and on.  A couple of weeks ago, we went to a birthday party where they were serving up a taco bar.  I volunteered to bring some kind of a dip appetizer and this is what I made.  It received rave reviews on taste and presentation and was gone in no time at all.

I was trying to think of the best way to present a dip like this and it occurred to me to try my springform pan.  It was perfect!  Everything layered up nicely and it was easy to serve.  I LOVE the flavor and color of salsa verde, so that’s what I used here but regular salsa would also work too.  If you don’t have a springform pan, you can easily use a pie plate.  Feel free to layer on any extra taco toppings you might have – chopped cilantro or olives, avocado would be delicious too if you’re going to eat it right away.  Any way you top it, it’s sure to go fast! :)

Salsa Verde Taco Dip
 
Ingredients
  • 2 8 oz. pkgs. CREAM CHEESE
  • ½ teaspoon CHILI POWDER
  • ¼ teaspoon GARLIC POWDER
  • ¼ teaspoon SEASONING SALT
  • 1 cup SOUR CREAM
  • ½ cup SALSA VERDE
  • 1 cup SHREDDED LETTUCE
  • 1 cup SHREDDED CHEDDAR
  • ½ cup CHOPPED TOMATO
  • Additional garnish - sliced green onion, chopped cilantro, chopped olives, etc.
Instructions
  1. Place cream cheese in a microwave safe bowl and heat in the microwave for 30-40 seconds to soften slightly. Beat cream cheese, spices and sour cream together until smooth.
  2. Spread cream cheese mixture in the bottom of a 9 inch springform pan (or a pie plate if you'd prefer). Pour salsa verde over the cream cheese layer.
  3. Layer on shredded lettuce, cheese, tomato and garnish with green onion, cilantro or olives.
  4. Remove outer ring from springform pan and place on a platter before serving. Serve with tortilla chips.
Notes
You can make this ahead of time, cover with plastic wrap and refrigerate until serving.

Garlic & Herb Stuffed Mini Sweet Peppers | Crumbs and Chaos Stuffed Mini Sweet Peppers – an easy appetizer that is so packed with flavor you may just ignore the main dish all together!

Can I start out today’s post by saying that any party that starts with an appetizer that involves cream cheese is a party I want to be at?  One of my go-to appetizers is ridiculously easy – 1 block of cream cheese mixed with 4-5 fresh minced garlic cloves.  Served warm or room temperature spread on crackers is about the best thing ever.

Well, these stuffed peppers are an upgrade of that particular cream cheese combination.  Sweet, crunchy peppers stuffed with a robust garlic and herb cream cheese, they’ll be devoured in no time.  And they’d be so perfect for any occasion because you can make them ahead of time.  Using fresh garlic cloves gives these quite a kick, if you’d prefer a more muted version using jarred minced garlic should do the trick.

Garlic & Herb Stuffed Mini Sweet Peppers
 
Serve up a plate of Garlic & Herb Stuffed Mini Sweet Peppers at your next gathering and watch them disappear!
Ingredients
  • 8 oz. block CREAM CHEESE, room temperature
  • 4 GARLIC CLOVES, freshly minced or grated
  • ½ teaspoon DRIED PARSLEY*
  • ¼ teaspoon DRIED DILL
  • 10-11 MINI SWEET PEPPERS, stems and seeds removed and cut in half long ways
Instructions
  1. Mix together cream cheese, garlic and herbs.
  2. Stuff each pepper half with about 1 Tablespoon of cream cheese mixture. Chill until serving.
Notes
*If you're using fresh herbs, multiply these measurements by three.

Simple Southwest Potatoes | Crumbs and Chaos #sidedish #potatoes www.crumbsandchaos.net The beauty of taking a little help from the freezer section for dinner is, that while you’re working on the main dish, your potatoes are baking away.  I chose to season mine simply and sprinkle them with a little bit of shredded cheese because potatoes and cheese just go together.  Adding fresh cilantro and finely chopped green onion brings the flavor explosion.  Don’t forget the dipping sauce – a little greek yogurt and hot sauce spices things up just a bit.  The potatoes come cut in chunks small enough to stab with a fork or big enough to be a finger food should you want to enjoy these as an appetizer for game day.

Want to make this a main dish?  Top with seasoned ground turkey or ground beef, pork carnitas or cafe rio chicken and dinner is served ;)

Simple Southwest Potatoes

This recipe for Simple Southwest Potatoes is easy to make and packed with flavor.

Ingredients

  • 1 (32 oz.) bag ALEXIA SMART CLASSICS TRI-CUT POTATOES
  • 1 Tablespoon TACO SEASONING
  • 1/2 cup PLAIN YOGURT (or sour cream)
  • 1 Tablespoon HOT SAUCE (I used Frank's Red Hot - use more if you'd like it spicier)
  • SHREDDED CHEESE (use as much as you like)
  • FRESH CILANTRO, chopped
  • GREEN ONION, finely chopped

Instructions

  1. Bake potatoes according to package directions.
  2. Make dipping sauce: mix together yogurt and hot sauce, set aside.
  3. When potatoes are done baking, sprinkle with taco seasoning and stir together to coat all of the potatoes. You can sprinkle on the cheese now and put back in the oven until the cheese is melted. Or if your serving dish is oven safe, you can put the potatoes in the serving dish and then top with cheese and put back into the oven to melt cheese.
  4. Sprinkle with cilantro and green onion. Serve immediately with dipping sauce.
