It’s the middle of July…and so far, it’s been everything you want from July – hot, hot, hot. Perfectly hot, humid, sticky Midwestern summer days that pretty much scream ‘pass me the cool treats!’
There are a few things you will always find in my fridge – butter, yogurt, orange juice, cream cheese and pickles. I decided to take two of these mainstays (orange juice and yogurt) and turn them into a refreshing summer treat. The makers of Simply Orange have recently brought a new version to markets everywhere – Simply Orange Low Acid, the same delicious, 100% pure squeezed orange juice you know and love complete with added calcium and reduced acid for a smooth, mild taste. This new option is perfect for those who love orange juice, but may be sensitive to acid. I love Simply Orange products because they’re never concentrated or sweetened. They hit the mark with their Low Acid version which tastes great and smooth on its own or paired with yogurt to make these popsicles.
To Make 2 Ingredient Orange Popsicles:
Grab your favorite popsicle molds. Whisk together 1 1/2 cups Simple Orange Low Acid Juice and 2 cups honey (or vanilla) yogurt. You can also add 1 teaspoon vanilla extract, but that’s completely optional. Pour mixture into molds and freeze until solid. When you’re ready to serve, remove from freezer and run the outside of the mold under hot water. Pull on popsicle stick to loosen and remove from mold. Serve immediately. (Yield will vary based on the size of your popsicle mold)
- 1½ cups SIMPLY ORANGE LOW ACID JUICE
- 2 cups HONEY YOGURT (you could also use vanilla)*
- 1 teaspoon VANILLA EXTRACT (optional)
- Whisk together orange juice and yogurt. Add vanilla extract if using.
- Pour into popsicle molds and freeze until solid.
- Run the outside of the mold under hot water and pull popsicle from the mold.
- Serve immediately.
