Easy to make fresh berry syrup comes together in minutes and makes a delicious Mixed Berry Ice Cream Soda!

One of the things I most look forward to in the spring is all the fresh berries. Today we’re using them to make a quick berry syrup that makes a refreshing ice cream soda or regular soda, if you’d rather. This syrup doesn’t require any cooking, which is a major bonus if you ask me. You can use fresh or frozen and thawed berries to make the syrup, which needs to chill for just a bit after you make it. Then you combine it with vanilla ice cream (store bought or homemade) and pour in sparkling water or lemon lime soda. Top it off with more ice cream and all you need is a spoon or straw…you’ve got a super refreshing soda on your hands.
- 1 cup STRAWBERRIES, chopped
- 1 cup BLACKBERRIES
- 1 cup RASPBERRIES
- ¾ cup SUGAR
- 4 Tablespoons FRESH LEMON JUICE
- VANILLA ICE CREAM
- SPARKLING WATER or LEMON LIME SODA
- Place berries, sugar and lemon juice in a food processor or blender. Process until smooth. Strain through a fine mesh sieve, discard solids. Place in a jar or small pitcher and chill until ready to use.
*You can use fresh or frozen and thawed fruit to make the syrup.
