Happy Thursday, ya’ll!  Today is a celebratory occasion…a virtual baby shower for Ashton of Something Swanky!  I have enjoyed being a contributor on Something Swanky for quite a while now.  She’s got desserts for days over there…Chocolate Chip Cookies anyone?  S’mores for everyone!  Pancakes for breakfast, lunch or dinner 🙂  Anyhow, some of us are getting together today to wish her congratulations on the upcoming birth of her baby boy!  Ashton, enjoy that new baby smell, those tiny little toes, new baby cuddles and becoming a family of 4.

It seems like spring is full of occasions to make and enjoy easy to grab and eat treats.  You get a little of everything all on one stick – sweet berries, fluffy angel food cake and a schmear of tart lemon icing.  A heavenly trifecta of flavors.  Did I mention they’re simple to make?  As in my 9 year old could easily make them while I’m beside her in the kitchen working on something else….somedays my favorite kind of dessert is the one someone else makes.  😉

Lemon Berry Fruit Kabobs

Ingredients
  • 1 cup POWDERED SUGAR
  • Juice of ½ LEMON
  • 2 teaspoons MILK
  • LEMON ZEST
  • CUBED ANGEL FOOD CAKE
  • FRESH BERRIES
  • SMALL WOODEN SKEWERS
Instructions
  1. Whisk together powdered sugar, lemon juice and milk.
  2. Skewer berries on wooden skewer. End with one cube of angel food cake. Spoon some of the lemon icing mixture on the cake.
  3. Repeat with remaining fruit and cake. Place on a serving platter and sprinkle with lemon zest.

    Anything easy is great in my books and these kabobs look just so delicious! I doubt my daughter could make them yet – she’s eight months old and would probably rather eat everything than make it pretty for others 😀
