Greek Potato Salad | Crumbs and Chaos

We’re talking a side dish full of flavor today!  This recipe for Greek Potato Salad is brought to you as part of an ongoing partnership with Kraft.

Summer is well underway and I love the chance to fire up the grill and make a no fuss meal. You know the kind where you actually get to sit down for a minute between the time you put the food on the grill and when you take it off while watching your children play peacefully in the backyard. Wait, is there such a thing? Well, I can definitely point you towards easy main dishes and offer you a simple side dish. You’re on your own for the peaceful children part.

Greek Potato Salad | Crumbs and Chaos

This flavorful side dish goes perfect along side your favorite BBQ main dish. I like to make extra baked potatoes or make a few while I’m baking something else, that way I’m one step closer to having something ready to eat when I’m short on time or need a little break. I left the peel on because I don’t mind them, but feel free to remove them if you like.

Greek Potato Salad | Crumbs and Chaos

This recipe uses those baked potatoes as the humble backdrop for a ton of fantastic Greek flavors. We’re combining the goods by adding diced cucumber, grape tomatoes and onion – all of which should be plentiful from the garden or farmer’s market about now. Grab some kalamata olives, feta and pepperoncinis from the grocery store and you’re just about set. Lastly, you’ll be mixing up a quick Greek vinaigrette using Good Seasons Dressing Mix, which is great to have on hand for a variety of summer salads.
