Hello National Cheesecake Day – so good to see you!
We’re celebrating with decadent Caramel Overload Cheesecake Bars!
I love coffee (straight up black, please!) alongside a sweet dessert, like cheesecake. There is no better way to end a meal than with a steamy cup of joe and a creamy dessert. Don’t miss the ginormous list of cheesecake recipes at the end of this post – there is seriously something for everyone!
So, what’s your favorite kind of cheesecake? I’m not sure I exactly have a favorite (I usually don’t discriminate when it comes to desserts). It’s obvious from the list below that there’s no wrong way to do cheesecake – traditional, bars, pie, milkshakes or cookies – it’s all gonna be good!! I went with all things caramel when whipping up these easy cheesecake bars. There’s caramel sauce in the batter, chopped Twix throughout and the crust is topped with Rolo Minis before you cover it in batter. Seriously sinful, especially when topped with a little extra caramel sauce before serving, for good measure of course. It’s so rich and delicious that it really doesn’t take more than a small square to get your cheesecake fix, which makes this a great dessert for a small crowd.
- 1½ cups SHORTBREAD COOKIE CRUMBS
- 1 Tablespoon SUGAR
- 4 Tablespoons MELTED BUTTER
- 2 (8 oz.) pkgs. CREAM CHEESE, room temperature
- ½ cup SOUR CREAM
- ½ cup SUGAR
- 2 EGGS
- 2 teaspoons VANILLA EXTRACT
- Pinch of SALT
- ¼ cup CARAMEL SAUCE
- 8 oz. pkg. ROLO MINIS
- 6 FUN SIZE TWIX BARS, coarsely chopped
- Preheat oven to 325 degrees. Prepare an 8x8 baking pan by lining it with foil and greasing with cooking spray.
- Combine cookie crumbs, 1 Tablespoon sugar and melted butter. Press into the pan in an even layer. Bake for 10 minutes. Remove from oven and set aside to cool.
- While the crust is cooling, beat together cream cheese and sour cream. Add ½ cup sugar and beat on medium-high speed for 2 minutes.
- Add in eggs, vanilla and caramel sauce and mix until well combined. Fold in chopped candy bars.
- Place Rolos in a single layer on top of crust. Pour cheesecake batter over Rolo layer. Bake for 40-45 minutes or until the center is no longer super jiggly.
- Let cool and refrigerate for about 4 hours before serving.
- Allow to sit at room temperature about 30 minutes before cutting and serving to give the caramel in the Rolos a little time to soften. Serve topped with extra caramel sauce if desired.
