I think sometimes we feel like really good food has to be complicated or take a long time to put together. Today I’m sharing a quick and flavorful appetizer that comes together in minutes and is perfect for enjoying with friends or eating as a snack any day of the week. We loved this with the Triscuit Tomato & Sweet Basil Crackers. These crackers are sturdy enough to hold all of the caprese goodness you can put on them and they’re also great for dipping!
Caprese Topped Triscuit Crackers
2 Tablespoons FRESH BASIL, chopped
1 cup CHERRY TOMATOES, quartered
2 oz. FRESH MOZZARELLA, diced
SALT & PEPPER
EXTRA VIRGIN OLIVE OIL
Stir together basil, tomatoes and mozzarella. Season to taste with salt and pepper, drizzle with olive oil and stir again. Serve immediately with your favorite Triscuit crackers.
