Veggie Smoothie

At our house we LOVE smoothies.  Usually we just throw some greek yogurt, spinach, a banana, OJ, and whatever frozen fruit we have in the blender.  It never ends up exactly the same, but it is always delicious!  However, we are always willing to try something new.  When I saw this Veggie Smoothie, I really wanted to try it.  I have juiced beets before and while it is a very earthy flavor it is really good when mixed with something sweeter like apples.  The color is so beautiful and it is so good for you!!  Instead of juicing, this recipe steams the veggies and fruits and then blends it together, so no juicer needed!

Beet Smoothie

Ingredients

  • 1 small BEET, peeled and cubed, about 1/2 cup
  • 1 medium CARROTS, peeled and cut, about 1/3 cup
  • 1 APPLE, peeled, cored, and cubed
  • 1 cup JUICE, orange or apple

Instructions

  1. Place beets and carrots into steamer basket in boiling water, steam for approx 8 minutes. Add apples, and cook 2 more minutes. Allow mixture to cool. Place in blender with juice, puree until smooth. ENJOY!

    Great recipe and so healthy! Do you use raw beets? I have some in the fridge, but I have never used them and this would a be a great way for me to get rid of them!

      Yep I used fresh beets. Cut the leaves off, peel (like you would a potato), and cube. Just beware of the beautiful purple juice that will cover your hands and cutting board! : )

    Did you know if you take the stem off the apple you can toss the whole thing in? I do it all the time and it saves time.
