Peppermint Cream Bites

So, it’s the 3rd of December and it’s time once again for 12 Days of Christmas Treats.  The time of year where my kids are super excited to see so many delicious treats coming out of the kitchen waaaay before Christmas!

First up, peppermint cream bites…you will get the sensation (name that commercial…)  Besides the fact that these are total mint perfection, they have a few other things going for them…aside from the crust they are no bake, you store them in the freezer – make them now, serve them at Christmas – and they fit perfectly in mini muffin papers, giving you the fancy candy feel.  What more could you ask for?  Stay tuned for 11 more days of Christmas treats…

Peppermint Cream Bites

Ingredients

  • 15 OREO COOKIES, crushed*
  • 2 Tablespoons BUTTER, melted
  • 2 cups POWDERED SUGAR
  • 2 Tablespoons BUTTER, softened
  • 2 Tablespoons MILK
  • 1 teaspoon PEPPERMINT EXTRACT
  • 6 ounces BITTERSWEET CHOCOLATE, chopped
  • 2 teaspoons SHORTENING

Instructions

  1. Preheat oven to 350°. Use foil to line an 8x8 pan.
  2. Combine crushed cookies and melted butter, press into the bottom of the pan. Bake for 8 minutes. Let cool on a wire rack for a few minutes.
  3. Combine powdered sugar and softened butter in a food processor. Pulse until butter is evenly cut into the powdered sugar. Add in milk and extract until a paste form. Carefully spread over crust, place in freezer for 45 minutes*.
  4. Melt chocolate and shortening in microwave for 1 minute, stir, Heat another 30 seconds, stir again until chocolate is melted. Let cool for 15 minutes. Spread over peppermint layer.
  5. Lift out of the pan using ends of foil and carefully cut into squares. Store in the freezer.

Notes

Trader Joe's and Aldi carry a candy cane chocolate sandwich cookie. They are amazing! I used these and they added an extra layer of peppermint goodness.

I needed to leave these in the freezer for a few hours and I just let them stand for a little while before putting on the chocolate layer and cutting.
