Eggnog Cranberry Oatmeal for National Oatmeal Day #yayoats

There have been very few times since my kids were born that I have not had oatmeal in my pantry.  Such an easy and versatile breakfast food, my kids love it every which way.  When you keep oatmeal on hand, it doesn’t take much time to have a warm, filling breakfast…something that we do several times a week during the fall and winter.
 
And since the weather is getting colder, eggnog has been on the shelves for a month or two now (crazy, I know!) and it’s time to enjoy it every way that you can.  To celebrate National Oatmeal Day, I made this seasonal version that you and your family can enjoy all eggnog season long!
 
 
Ingredients

  • 1/2 cup EGGNOG
  • 1/2 cup WATER
  • 1/2 cup Quaker® OLD FASHIONED OATS
  • 2 Tablespoons DRIED CRANBERRIES
  • 1 Tablespoon BROWN SUGAR
  • NUTMEG (whole or ground)

  1. In a small saucepan, bring eggnog and water to a boil.
  2. Add oatmeal, stir to combine and reduce heat to medium-low.
  3. After about 2 minutes, add cranberries. 
  4. Cook for 3 minutes more, stirring occasionally until most of the liquid is absorbed.
  5. Stir in brown sugar and spoon into a bowl and sprinkle with nutmeg before serving.

     Serves 1.
