Chocolate Chip Cookie Dough Sandwiches

I have recently fallen in love with a new cookbook called The Cookie Dough Lover’s Cookbook.  I was a cookie dough lover before but now I have a whole new love for it.  In the past I have tried a few different eggless cookie doughs but I can honestly say this is the BEST eggless cookie dough I have ever had.  I usually end up making it on a weekly basis.  And along with the chocolate chip version they have a whole bunch of variations, such as peanut butter, mexican chocolate, gingerbread, and the list goes on and on….
So that brings me to this particular treat… A chocolate chip cookie dough sandwich.  Two chocolate chip cookies with a cookie dough frosting between them.  What more could you ask for???  I have made them twice and both times they have come with rave reviews.  I highly recommend them for a sweet treat on any occasion.

Chocolate Chip Cookie Dough Sandwiches

Yield: 18 sandwich cookies

Ingredients

    Cookies:
  • 3/4 cup UNSALTED BUTTER, room temperature
  • 2/3 cup SUGAR
  • 2/3 cup BROWN SUGAR, packed
  • 2 EGGS
  • 2 teaspoons VANILLA
  • 2 cups FLOUR
  • 1/2 teaspoon BAKING SODA
  • 1 teaspoon SALT
  • 1 1/2 cups MINI CHOCOLATE CHIPS
  • Cookie Dough Filling:
  • 1/2 cup UNSALTED BUTTER, room temperature
  • 1/2 cup BROWN SUGAR, packed
  • 1/4 cup FLOUR
  • 1/4 cup POWDERED SUGAR
  • 1/4 teaspoon SALT
  • 1/4 cup HEAVY CREAM
  • 1 teaspoon VANILLA
  • 1/2 cup MINI CHOCOLATE CHIPS

Instructions

    Cookies:
  1. Beat together butter and sugars until smooth. Add in eggs and vanilla, scraping sides as you go. Add flour, baking soda and salt, mix until well combined. Stir in chocolate chips, cover and refrigerate at least 1 hour or overnight.
  2. Preheat oven to 350°. Roll chilled dough into tablespoon size balls. Flatten slightly and place on a parchment paper lined cookie sheet. Bake for 9-11 minutes or until lightly golden. Cool on wire rack.
  3. Cookie Dough Filling:
  4. Beat together butter and brown sugar until light and fluffy, mix in flour, powdered sugar and salt on low speed until well incorporated. Slowly add heavy cream and vanilla, beat about 2 minutes. Stir in chocolate chips.
  5. To Assemble:
  6. Sandwich 1 heaping tablespoon of filling between 2 cookies. Press lightly until filling spreads, repeat.
