Mint & Basil Lemonade

*No, you aren’t imagining things.  This post did show up last week by accident.  But here it is today, posting on the correct day, complete with the pictures.  This is an incredible lemonade, totally worth squeezing all those lemons. -Becca

On a hot summer day there are very few things that I find quite as refreshing as a tall glass of lemonade over ice.  Especially if it is freshly squeezed!  Thanks to my in-laws I have recently discovered a love for mint.  They gave me some mint plants from their yard and I have been obsessed with putting it in water with lemon.  So recently when I stumbled upon Mint & Basil Lemonade when wandering the web, my mouth started watering.  I am loving mint and basil is in my top 5 favorite herbs, so it was a no brainer really!

It was a big hit with everyone.  The taste of the herbs is subtle and refreshing!  I mix mine in a pitcher and add ice because I like it really cold and like a little extra water, because otherwise I find it too sweet and syrupy.  I will definitely be making it again and again and again…. and well come to think of it, I’m not sure that I will ever go back to regular lemonade!

Mint & Basil Lemonade

Ingredients
  • 1/2 cup fresh MINT LEAVES, loosely packed
  • 1/2 cup fresh BASIL LEAVES, loosely packed
  • 1 cup WATER
  • 2 cups SUGAR
  • 2 cups freshly squeezed LEMON JUICE
  • 2 cups WATER
Instructions
To make a simple syrup heat mint leaves, basil leaves, sugar, and 1 cup water, in a saucepan over medium heat. Cook until sugar dissolves. Remove from heat and drain through a sieve. Press leaves to release all liquid. Discard leaves. Combine simple syrup, lemon juice, and 2 cups of water. Serve chilled and over ice. ENJOY!!

    I seriously LOVE mint. It freshens up any drink or dish it’s used in–go figure, right!? I always thought it’d make everything taste like mouthwash but it really is subtle and perfect. This lemonade looks rockin’ for a hot summer’s day!
