Multicolored Meringues + A giveaway

5 ingredients or less on what seems like it would be so complicated and elaborate?  Count me in!  
Crisp on the outside and a little chewy on the inside… YUM!  
It was a fun baking experience for me and the kids, because they love to help you use the mixer and pick out what colors we would use.  The possibilities are endless!  We went for the pastel-y spring colors for Easter, but you could use your favorites.
The process isn’t too time consuming, but they do take over an hour to bake and cool.  But when they are finished you can eat them solo or sandwich ice cream or whipped cream between them for a special treat.  We used chocolate ice cream in the middle of ours and enjoyed it.  Vanilla would work and I can imagine that strawberry ice cream would not only taste delicious, but make for quite a beautiful presentation.  Either way they are a perfect dessert for your Easter meal.

Multicolored Meringues

Ingredients
  • 3 EGG WHITES
  • 3/4 cups SUPERFINE SUGAR
  • 1/2 teaspoon CORNSTARCH
  • 1/2 teaspoon LEMON JUICE
  • FOOD COLORING
Instructions
Preheat oven to 250 degrees. Whisk egg whites til stiff peaks begin to form. Add 1 teaspoon of sugar to the egg whites and whisk. Pour in a second teaspoon and continue whisking. Add remaining sugar, while whisking to stiff peaks. Whisk in the cornstarch and lemon juice until just combined. The meringue should look smooth and glossy. Divide meringue into bowls, depending on how many different colors you want. Add food coloring one drop at a time and fold in with spatula. Spoon the meringue into a piping bag and squeeze to make swirls onto cookie sheets lined with parchment paper. Make each one about 1 inch across. Bake the meringues for 30-35 minutes, until firm on the outside. Turn off the oven and leave them for a further 45 minutes. Remove from the oven and cool. ENJOY!

    I’m actually embarrassed to admit this, but I’m going to someone’s house for Easter dinner and unfortunately between a full-time job, graduate school, being an EMT, and throwing a baby shower on Saturday, I’m afraid I won’t have any time to cook so I don’t plan on taking anything (oops). I would at least take a bottle of wine, but I don’t drink either so I wouldn’t even know what’s good. I’ll have to make up for not taking anything with my outstanding personality. 🙂
