A few months ago a dear friend of mine gave me the cutest thank you gift. It was a monogramed bag and inside was a tasty little treat. It was this snickers popcorn and have one bite I knew I had to make it sometime and share it with my friends. It would be a great treat to share with friends this time of year or all year round. I only made half of the recipe when I made it because it would require a lot of counter space and a great big bowl which I didn’t have but it was plenty to make at one time unless you had a lot of people to give it to.
Day 1: Glazed Eggnog Cookies
Day 2: Salted Chocolate Tartlets
Day 3: Peanut Buster Caramel Bars
Day 4: Rolo Pretzel Turtles
8 quarts air popped popcorn (about 2 cups of kernels)
1 cup salted butter
2 cups light brown sugar, packed
1 teaspoon salt
1/2 cup light corn syrup
1 teaspoon baking soda
1 cup salted peanuts
30 “fun-size” Snickers bars, coarsely chopped
3oz melted semi-sweet chocolate (optional)
Preheat oven to 200 degrees.
Over medium heat boil butter, brown sugar, salt and corn syrup for 5 minutes.
Remove from heat and stir in baking soda.
Pour over popcorn and stir to coat evenly.
Transfer to countertop lined with waxed paper and sprinkle peanuts on top.
Transfer to a large roasting pan and bake for 1 hour and 15 minutes, stirring every 15 minutes.
Remove from oven and stir in the Snickers. Place back in the oven for 3 minutes so the Snickers melt slightly.
Remove from pan and transfer back to wax paper to cool.
Drizzle melted chocolate on top, if desired.
Let set and store in an airtight container.
