Glazed Eggnog Cookies

So, I’m here today to talk about eggnog.
I think there are 3 types of people in this conversation – the first type ones love it, the second type hates it and the third have never wanted to try it because it smells funny to them.

My husband is the first type and I am the third type.  Well, I was, until last winter when I had an eggnog latte.  It was delicious and ever since I haven’t been so afraid of it.  I had a recipe in my fabulous folder of printed-I-need-to-make-these-someday-recipes, it’s been there since last December…just waiting.
I woke up this morning out of a dream I was having about eggnog lattes.  All of a sudden I needed to make these cookies…today.  And I didn’t have enough sugar in the house to make them.
It was a very long day, I finally got the sugar at about 5:30 this evening and so I made them.  They are outstanding.  Especially with the glaze…of which I might be using a spoon to finish off the rest of while I write this because I’m the only one home (that’s awake) and it seems a shame to let it go to waste.

If you’re an eggnog lover (or if you know one), add these to your Christmas treat tray.  You’ll be glad you did.

2 1/4 cups FLOUR
1 teaspoon BAKING POWDER
1 teaspoon NUTMEG
1/2 teaspoon CINNAMON
1 1/4 cups GRANULATED SUGAR
3/4 cup BUTTER, room temperature
1/2 cup EGGNOG
1 teaspoon VANILLA EXTRACT
2 EGG YOLKS
1 1/2 cups POWDERED SUGAR
3-4 Tablespoons EGGNOG
Preheat oven to 300°.
In a medium bowl, combine flour, baking powder, nutmeg and cinnamon.
In a large bowl, beat together butter and sugar until light and fluffy.  Add eggnog, vanilla and egg yolks.  Beat at medium speed until smooth.
Add flour mixture and beat at low speed until just combined.  Do not over mix.
Place a 1 Tablespoon-sized mound of dough on cookie sheets, give them some room to spread.  Sprinkle lightly with nutmeg.
Bake 15 to 18 minutes or until the edges just start to become golden.  Remove to a wire rack to cool.

Mix together powdered sugar and eggnog to make glaze.  You may need more eggnog to make it thin enough to drizzle or spread.  Sprinkle with cinnamon after glazing.

Makes about 3 dozen.
