Eggnog Coffee Cake

So, you know Christmas is coming right?  
I can see it from here, next week at this time we’ll be recovering from all of the fun and excitement and wonder that Christmas has to offer.  
This week we’ll be sharing make ahead breakfast ideas that are ideal for holidays and gatherings and, of course, hungry people.

I’ve mentioned before that I love to eat ‘cake’ for breakfast every now and then and that I have also recently overcome my fear of eggnog by devouring eating these, so I thought it was only appropriate that eggnog coffee cake make an appearance on my breakfast table.  It was delicious with my morning coffee.  This coffee cake has a lovely texture and flavor and would pair well with anything else that you are serving for breakfast Christmas morning.  It does have to sit for 8 hours before baking.  Bonus (for some of you) – it doesn’t have a strong overwhelming eggnog flavor.  In fact, if you didn’t tell someone, they may not be able to tell.  If necessary, it could be our little secret.

Eggnog Coffee Cake

Ingredients

    CAKE:

    • 1 cup SUGAR
    • 1/2 BUTTER, softened
    • 1 cup EGGNOG
    • 1 (8 oz.) container SOUR CREAM
    • 1 teaspoon RUM EXTRACT
    • 2 EGGS
    • 2 1/2 cups FLOUR
    • 1 1/2 teaspoons BAKING POWDER
    • 1/2 teaspoon BAKING SODA
    • 1/2 teaspoon SALT

    STREUSEL TOPPING:

    • 1/3 cup SUGAR
    • 1 Tablespoon FLOUR
    • 1 Tablespoon BUTTER, softened
    • 1/2 teaspoon GROUND NUTMEG

    GLAZE:

    • 1/2 cup POWDERED SUGAR
    • 1-2 Tablespoons EGGNOG
    Instructions
    Grease bottom only of a 9×13 baking pan.
    In a small bowl, mix together topping ingredients until crumbly. Set aside.
    In a large bowl, beat together 1 cup sugar and 1/2 cup butter until well combined. Add 1 cup eggnog, sour cream, extract and eggs; mix well. Stir in 2 1/2 cups of flour, baking powder, soda and salt.
    Spread in prepared pan. Sprinkle topping mixture over batter. Cover and refrigerate at least 8 hours.
    Preheat oven to 350°. Bake uncovered 35-40 minutes or until a toothpick comes out clean. Cool 20 minutes.
    Mix together powdered sugar and eggnog until smooth. Drizzle over coffee cake. Sprinkle with extra nutmeg, if desired.
    *I actually didn’t have any rum extract so I left it out and it was still super delicious!
