Above you can see a recap of our first 11 WONDERFUL days of Christmas treats!  Today, I am going to wrap things up with a deliciously rich treat.  Unlike the typical Christmas cookie or treat, I’m not sure that this treat is for everyone.  It’s strong molasses flavor falls into the same catagory as eggnog… or kalamata olives… you either love it or you hate it.  SO, if you like molasses, this is the treat for YOU!  It is small and easily handled, good for a snacking type party or to bag up to give as a gift.  The texture is dense and chewy and the flavor lingers.  In many ways, I love the lingering flavor of the molasses after the treat is gone just as much as the rich flavor you experience as you devour it!

CHEWY MOLASSES SQUARES

Ingredients
1 3/4 cups FLOUR
1/4 teaspoon BAKING SODA
1/4 teaspoon COARSE SALT
1/3 cup BUTTER, room temperature
3/4 cup SUGAR
1 cup UNSULFURED MOLASSES
4 large EGG WHITES
POWDERED SUGAR
Directions
Preheat oven to 350 degrees.  Lightly coat an 8-inch square baking dish with cooking spray.  In a small bowl, whisk together flour, baking soda, and salt.  In a large bowl, using an electric mixer, beat butter and sugar on medium-high until pale and fluffy, 4 minutes.  With mixer on medium, add molasses and egg whites and beat until combined.  
Transfer batter to dish and smooth top.  Bake until center of cake comes out clean, 40 to 45 minutes.  Let cool completely in dish on a wire rack.  Invert cake onto a cutting board and cut into 1 1/2-inch squares.  When you are ready to serve, toss in powdered sugar to coat.  ENJOY!!
