Pumpkin Chocolate Chip Cookie Pie

Two words – lovable and delicious!  
How could you not love a dessert with the words pumpkin, chocolate chip and cookie in the title?

I’m here today to tell you that this is an absolutely fabulous combination.  If you’re a sucker for a warm, gooey cookie, then this is for you.  This has a wonderful pumpkin spice flavor with the texture of a cookie pie, so totally not pumpkin pie-ish at all.

I wish I would have had some ice cream to enjoy this with…I guess I’ll just have to make it again soon so that I can make sure it’s just as delicious with ice cream as it is without!

2 EGGS
1/2 cup FLOUR
1/2 cup GRANULATED SUGAR
1/2 cup BROWN SUGAR
1 cup BUTTER, melted and cooled to room temperature
1/3 cup PUMPKIN PUREE
2 teaspoons VANILLA 
4 teaspoons PUMPKIN PIE SPICE
1 cup CHOCOLATE CHIPS, tossed in a little bit of flour
1 PIE SHELL, unbaked
Preheat oven to 325°.
Beat eggs until foamy.  Add flour and sugars, beat until well combined.  
Add in vanilla, pumpkin puree and pumpkin pie spice, mix well.  Blend in melted butter.  
Fold chocolate chips into the batter and pour into the pie crust.
Bake for 55 minutes or until center is no longer jiggly.  
Serve warm with ice cream!
