Bruschetta Chicken Bake

I was trying to think of a new recipe with chicken and my sister had recommended this recipe from the Kraft Foods website.  I had most of the ingredients on hand so I thought I’d give it a try!   As usual, for me, very simple, and delicious!

1 1/2 pounds boneless, skinless chicken breast (cut into bite size pieces)
1- 14 1/2 ounce can diced tomatoes, undrained
1- 6 ounce box Chicken Stove Top Stuffing mix
1/2 cup water
2 cloves garlic, minced
1 teaspoon dry basil
1 cup shredded mozzarella cheese
Preheat oven to 400 degrees.  In a bowl, mix tomatoes, stuffing mix, water and garlic until stuffing is moistened.  In 9×13 baking dish, layer chicken, basil and cheese.  Top with stuffing.  Bake for 30 minutes or until chicken is done.
(The only thing I would do different next time is…add more cheese!!!)
Makes about 6 servings.

    I’m so glad you posted this because I think I made this once and I remember it being so good. I love the simplicity of it and the combo of the stuffing, tomatoes and cheese over top the chicken – love it. Putting this back on the menu plan.

    Do you pre-cook the chicken? Or just put it in raw?

      The chicken doesn’t need to be precooked, it will be in the oven long enough to cook through.
