Pumpkin Waffles

I was searching for a great pumpkin recipe and came across these Pumpkin Waffles.  We love waffles at our house, and, we love pumpkin.  So this was the perfect recipe for us.  Everyone enjoyed them!  I wish I would have made more!

Pumpkin Waffles

1 egg
3/4 Cup pumpkin puree
3/4 Cup milk
1/2 Cup flour
1 Tablespoon butter, melted
1 teaspoon baking powder
1/2 teaspoon salt

Beat egg in large bowl until light and fluffy.  Add remaining ingredients and whisk until smooth.

Bake the batter in a hot waffle iron.

Enjoy!

(This recipe made about 6 waffles.  So adjust recipe according to how many you want to make.)

    I used buttermilk instead of milk on my second try with these and they were somehow even a little bit better. Thanks for the recipe!
