Spicy Tuna Melts

I love when I can add a simple ingredient to a meal I already like, to give it a new exciting twist.  This recipe does just this.  It takes a very basic tuna melt, adds salsa and pepper jack cheese.  It creates a little bit of a new texture and gives it a kick.  The nice thing about this, is that it is really customizable to the spice level you like.  I used a medium level garlic and cilantro salsa that was enough of a kick for me but wouldn’t be too hot for the kids.  You could also use monterey jack cheese instead of pepper jack for a milder flavor.  The original recipe also called for this to be served on a sliced baguette.  I instead opted for one of my favorite rolls, the ciabatta roll.  Anyway you do it, I think it would be wonderful!


SPICY TUNA MELTS

Ingredients

2 – 6 oz cans of TUNA, drained
1/4 cup MAYONNAISE
3/4 cup SALSA
4 CIABATTA ROLLS
PEPPER JACK CHEESE, shredded
Directions
Preheat broiler with the oven rack in the top position.  In a bowl combine tuna, mayo, salsa.  Season with  salt and pepper.  Cut the rolls in half and place on a baking sheet.  Divide the tuna mixture among the 4 rolls.  Top each with pepper jack cheese.  Place under the broiler until cheese is melted and browning, about 5 minutes.  Just be careful not to burn the roll.  ENJOY!

    What a great idea! I love tomato on tuna, but have never tried salsa. Sounds yummy.

    Oh there you go! My husband eats very basic tuna melts (without mayo because he hates it), this would be really good. He loves spicy foods (I do too) and I’m sure this would be leaps and bounds better than just tuna and American cheese!
