Glazed Coca Cola Cupcakes

Glazed Coca Cola Cupcakes are perfect for your next party!
Last weekend I made cupcakes.
In honor of myself…it was my 30th birthday.
While the fact the I was 30 years old was a shock to some – my 6 year old asked, “How old are you, Mom?”  I replied, “Thirty.”  She said, “Whoa.”  My son chimed in, “Mom, are you really thirty?!?”  It’s hilarious that when you are so young anything that’s older than you is a really big number.

I had seen these cupcakes a while back and was just waiting for the opportunity to make them.  They were the perfect way to celebrate.  The texture is lovely and the glaze adds just enough sweetness to make the perfect cupcake.

1 1/2 cups FLOUR
1 cup SUGAR
1/2 teaspoon BAKING SODA
1/4 teaspoon SALT
1 EGG
1/2 cup BUTTERMILK
1 teaspoon VANILLA
1/2 cup BUTTER
2 Tablespoons COCOA POWDER
3/4 cup COCA-COLA
Preheat oven to 350°.  Line a muffin tin with papers.
In a large bowl, combine flour, sugar, baking soda and salt.
Measure the buttermilk, add the egg and vanilla to the measuring cup and beat together.
In a heavy saucepan, melt the butter, cocoa and coca-cola over medium-low heat until combined.
Pour into the dry ingredients, stir well with a wooden spoon.  Add the buttermilk mixture and stir well to combine – expect the batter to be rather thin.
Divide evenly among muffin cups, bake for 16-18 minutes or until a toothpick comes out clean.
For the glaze:
1 1/2 cups POWDERED SUGAR, sifted
2 Tablespoons BUTTER
3 Tablespoons COCA-COLA
1 Tablespoon COCOA POWDER
1/2 teaspoon VANILLA
In a heavy saucepan, combine butter, coca-cola and cocoa powder.  Stir over low heat until the butter has melted.  Remove from the heat, add the vanilla and powdered sugar.  Mix well.  Pour over the cupcakes while they are still warm.

    Happy Birthday, I was 30 this year to…are we really that old? Ancient in the eyes of the little ones, I guess 🙂
    These look delicious, I wonder if they would change any if Pepsi was used. I prefer Coke myself, but I do not drink soda and my beau likes Pepsi; I can give him the leftovers 🙂

    This is fabulous! My husband went nuts over the Coca Cola cake at Cracker Barrel and I’ve never tried a recipe for it – but now I’ll have to give these a shot and see if they do the trick! 🙂 So glad to have found your pretty blog at Miranda’s place!
