(Game Day) Sweet & Sassy Chicken Salad Sliders

This week we’re bringing you new recipes to join the others in our Game Day collection.
Chicken salad…it’s one of those things that you either really love or hate AND there are several different ways to make it.  This is my very own version – I would tell you not to knock it until you’ve tried it.  About two weeks ago, it turned a chicken salad hater into a chicken salad lover – she tried it at my house and later asked me for the recipe, her husband had to beg her to share some with him.
What I love about chicken is it’s versatility – it’s a total blank canvas.  The sweet in this salad comes from a crisp Gala apple, red pepper and, of course, the Hawaiian Sweet Roll.  The sass comes from fresh garlic and dijon mustard – an all around winning combination that may just turn chicken salad haters into chicken salad lovers.  This is a winner for any game day gathering because it can be prepared in advance and put together right when you need it.

2 cups CHICKEN, cooked and diced
2 cloves GARLIC, finely minced or grated
1/2 cup finely chopped RED BELL PEPPER
1 small GALA APPLE, cored and chopped
1 Tablespoon DIJON MUSTARD
3/4 cup MAYO
SALT & PEPPER
1 pkg. (12 count) KING’S HAWAIIAN ROLLS, split
RED or GREEN LEAF LETTUCE, rinsed and torn into pieces that fit on the rolls

In a bowl, combine chicken, garlic, red pepper, apple, mustard and mayo.  Season with salt and pepper.

You can cover and refrigerate at this point.  When ready to serve, line the rolls with lettuce and a mound of chicken salad.  Replace roll tops and serve.

    I made sliders on Hawaiian rolls this week too! I think they are the best rolls for making gameday sandwiches.
