(Game Day) Pepperoni Pizza Puffs

This is a great way to kick-off (no pun intended!) any tailgate.  These were a huge it at our latest football party and they were so easy to throw together.  Everyone loves pizza and it is even better when you can just pop it in your mouth.  You could definitely change up the pizza ingredients if you didn’t prefer pepperoni.  These did not last long so if you are the host and you want to try one, you better grab one before you set them out.

Pepperoni Pizza Puffs
3/4 cup flour
3/4 teaspoon baking powder
1 Tablespoon Italian Seasoning
pinch of salt
pinch of red pepper flakes
3/4 cup whole milk
1 egg, lightly beaten
1 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
1 cup pepperoni, diced
1/2 cup store bought pizza sauce
Preheat oven to 375 degrees.  Grease a 24-cup mini muffin pan.  In a large bowl, whisk together flour, baking powder, Italian Seasoning, salt and red pepper flakes.  Whisk in milk and egg.  Stir in the mozzarella, parmesan and pepperoni, let stand for 10 minutes.
Stir the batter and divide among the mini-muffin cups.  Bake until puffed and golden, 20-25 minutes.
Warm pizza sauce and serve with pizza puffs.
