(Mini) Chicken Taco Salads

Last month I signed up to be a part of the Secret Recipe Club.  It’s a group of food bloggers who are ‘secretly’ assigned another food blog each month.  You peruse the recipes posted on the blog you are assigned and make or bake something from that blog and then blog about it on a specific day and time.
This is my first month and my posting day is actually next Monday, so stay tuned until then to hear what I made from my assigned blog.  There was a Reveal Day this past Monday where the first group shared what they made.  But there was one blog assignment that didn’t get completed for that day.  The leader of Secret Recipe Club, Amanda, asked if there was anyone who would volunteer to do an extra post…she received such an overwhelming response and thought it would be great if anyone who could (and would!) take the time to make something from this particular blog.  So I thought I would be great to join in the fun!
The blog is Connor’s Cooking…there you will find a wide array of recipes – some healthy, some indulgent.  Things I’ve put on my list to try are these Bacon Waffles, I think my kids would love the Honey Lemon Muffins and the Hot Chocolate Cupcakes are adorable!
I made the Chicken Taco Salad because I LOVE all of the flavors of a salad like that.  I changed things up a bit and made mini corn tortilla bowls in the microwave.  I add black beans and squeezed some lime juice on top for good measure.  These aren’t just delicious, they are adorable and hand held!  I love it when using a fork is optional!
(MINI) CHICKEN TACO SALADS

12 (6 inch) CORN TORTILLAS
SALT
VEGETABLE OIL
1 HEAD OF GREEN LEAF LETTUCE, torn into bite sized pieces
2 cups COOKED CHICKEN, diced or shredded
1 cup BLACK BEANS, drained and rinsed
DICED TOMATOES
1 cup SHREDDED CHEESE
LIME WEDGES, for serving
1/2 cup SOUR CREAM
1/4 cup SALSA
1/2 teaspoon GROUND CUMIN
1/2 teaspoon HOT SAUCE (I used Frank’s Red Hot)
You will need small microwavable bowl (like Pyrex or ramekins).  Brush the inside of the dishes and one side of the tortilla with oil.  Place the tortilla, oil side up, inside of the dish so that it forms to the shape of the bowl. Lightly sprinkle with salt.
Microwave for 1 minute.  Check to see if they are becoming crisp.  Continue microwaving at 15 second increments until they are crisp.  Be careful not to overcook them (ask me how I know!).  Remove from the bowls to cool on a wire rack.  Cook the remaining tortillas the same way.
In a large bowl, combine lettuce, chicken and black beans.  Set aside.
In a small bowl, whisk together the sour cream, salsa, cumin and hot sauce.  Pour over the lettuce mixture, toss with a tongs to coat evenly.
To assemble: fill each tortilla shell with the salad mixture, top with cheese and tomatoes.  Serve immediately with lime wedges for squeezin’ on top!

    I love “mini” foods. I baked Cinnamon Sugar Donut Muffin Minis from Connor’s Cooking. Love your chicken taco salad minis! They would be a big hit at our house.
