Chocolate Coconut Bars

My latest and greatest waste way to spend any ‘free’ time is on Pinterest…oh dear, I really could sit for hours and just peruse.  In case you didn’t know, Pinterest is a virtual pinboard on which you can organize and share things that you find on the web.  People pin all kinds of things…decor, inspiration for weddings and parties, recipes, DIY things they want to try.  You can view the pinboards of others to see what they’re loving and follow them to see their discoveries as they are pinned.
It was on Pinterest that I saw these beauties…chocolate coconut bars.  I’m really loving chocolate and coconut these days and these bars did not disappoint.  The chocolate-y crust, sweet gooey filling studded with nuts and chocolate all topped with toasted coconut – A M A Z I N G!

This recipe makes a pan full of bars, so they would be great to make for your next get together…unless you don’t want to share.  And that I would totally understand!

3 cups FINELY GROUND COOKIES or GRAHAM CRACKERS*
1/4 cup SUGAR
3/4 cup (1 1/2 sticks) BUTTER, melted
1 cup PECAN PIECES
1 cup SEMI-SWEET CHOCOLATE CHIPS
1 can (14 oz.) SWEETENED CONDENSED MILK
1 1/2 cups SWEETENED SHREDDED COCONUT
Preheat oven to 375°.  Lightly grease a 15×10-inch rimmed baking sheet, then line with parchment paper.
In a large bowl, combine cookie crumbs, sugar and butter.  Evenly press in the bottom and up the sides of the baking sheet (I like to use a dry measuring cup to help press everything down firmly).
Bake for 10 minutes, rotating halfway through.  Transfer to a wire rack to cool, about 20 minutes.
Sprinkle cooled crust evenly with pecan pieces and chocolate chips.  Pour condensed milk over the top (do not let it drip over the edges).  Sprinkle with coconut.
Bake until coconut is toasted, 10-15 minutes.  Cool completely before cutting into bars.
*I used about 1 cup of graham cracker crumbs and 2 cups of chocolate animal cracker crumbs.  It was the perfect combination.
