Mozz-Tomato-Olive Skewers

Sometimes you just need a beautiful appetizer you know is delicious and impressive.  This is one of those.  It isn’t labor intensive, if you can thread things on a skewer you’re in business.

I made these for our family Christmas Eve and can’t believe it has taken me so long to share them with you.  The flavors of fresh ingredients like these can not be beat.  These are so good!

For the skewers:

4 oz. FRESH MOZZARELLA (small balls if you can find them)
16 GRAPE TOMATOES
16 BLACK OLIVES (like Kalamata? You could use those too.)
32 small BASIL LEAVES (I ended up cutting larger ones into pieces)
16 (4-6 inch) WOODEN SKEWERS*

For the dressing:

2 Tablespoons EXTRA VIRGIN OLIVE OIL
1/2 teaspoon MINCED GARLIC
1/4 teaspoon DRIED THYME
1/8 teaspoon SALT
1/8 teaspoon freshly ground BLACK PEPPER
Dash crushed RED PEPPER FLAKES

Place mozzarella, tomatoes and olives in a medium bowl.  Add all dressing ingredients, stir to combine.  Cover and refrigerate 1 to 3 hours.

Thread cheese, tomatoes and olives onto skewers, placing basil leaves in between.  Place skewers on platter. Serve.

*I searched all over for small skewers and finally found them at the local grocery store chain, in the baking aisle near the cooking utensils.  The brand was Good Cook.
