Sausage Gravy

February 21, 2011 By Crumbs and Chaos

I know, I know…another breakfast dish.

This one happens to be extremely well loved and is upon request.  It was described by my baby sister one day last December as “The best biscuits and gravy of my whole life.”  And she would know, she’s had a lot of biscuits and gravy in her days.

Yes, you can buy a packet of gravy mix, but why?  It’s simple to make with everyday pantry ingredients.  You’ll have to trust me because it’s hard to photograph gravy and make it look really good.

SAUSAGE GRAVY
Printable Recipe Here

1 lb. PORK SAUSAGE
1 pinch CRUSHED RED PEPPER FLAKES
1/2 cup FLOUR
2 cups MILK
2 cups HALF and HALF*
1 Tablespoon WORCESTERSHIRE SAUCE
1 teaspoon SEASONING SALT (or white salt)
1 teaspoon BLACK PEPPER

Cook sausage in a skillet until no longer pink.  Drain fat.

Add crushed red pepper flakes and cook until the meat is well browned (brown meat = flavor).

Stir in flour and mix until dissolved, about 2 minutes.

Add milk, half and half and worcestershire sauce; cook over medium-low heat until thickened and bubbly (about 5 minutes).

Stir in salt and pepper.  Serve over biscuits.

*You can use more milk in place of the half and half.  If you do, expect it to take longer to become thickened, it could take up to 15 minutes.
