Tomato Artichoke Soup

My mom makes this soup once in a while and I’m not a huge ‘chunky soup’ kind of girl, but for some reason I love this soup!

Here’s what you’ll need:

1 lb. hot sausage
3 cans diced tomatoes
1 can artichokes, chopped
1 envelope dry onion soup mix
4 cups water
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon italian seasoning



Brown sausage in pan. Drain. In large pan, mix all ingredients. Heat through.  It’s as simple as that!  Works great to put in the crock pot if you want it to stay warm for a while!
